Will the anti-spam appliance work with catch-all email addresses?

Yes, although each non-existent email address that forwards to the catchall will count towards the number of mailboxes that are scanned by the Anti-Spam and Anti-Virus Email Filtering. We highly recommend that you configure specific mailboxes for each mail address for which you expect to receive email. Some domains can end up receiving email from thousands of unique email addresses using a catchall. Since we bill by increments of 35 mail users and 10,000 email messages filtered, thousands of unique email addresses could prove to be expensive.
